Following the work done in conjunction with the Dell engineer and subsequent server reboot, the problems appears to be resolved and there have been no further issues.

Following consultation with DELL engineer we have applied a number of software and configuration changes to system in question, however we need to reboot this system for the change to take effect. Therefore we will be rebooting the system at 8pm...

The Core server has now completed applying updates. The individual virtual machines on it are starting up and are now available or will be shortly.
The server (and its various VMs) maybe slightly sluggish for teh next 30-60 mins as everything...

It appears that a regular restart of the server caused it to try and apply microsoft security updates.
For some reason this failed and the server stalled. We have now managed to get the server to restart correctly and it is currently starting up...
